Method of preparation

To my mind, delicious food is one of the greatest pleasures in our life. I’ve been living in Moscow since my birth and can tell you many interesting things about its restaurants of Italian, French, Chinese, Japanese and Indian cuisine. However, first of all I’d like to share some secrets of typical Russian cuisine with you.

Russian cuisine is indeed original. Its distinctive feature is not only in original recipes but also in the fact that it reflects a certain way of life. Russian people usually have meals three times a day. In the morning they have breakfast, in the afternoon — dinner and in the evening it’s time for supper.

Let us start with breakfast. This meal doesn’t usually take much time to prepare, due to the fact that people, as a rule, are in a hurry for work, school or somewhere else. It may include just sandwiches, fried or scrambled eggs, corn flakes or muesli and various kinds of porridges. It can be cream of wheat, oatmeal porridge, rice or buckwheat porrige. It is more common for Russian people to drink black tea with jam or honey but there are ones who prefer coffee in the morning. You may think there is nothing special in this set of dishes. You are right. But it was a description of a typical working day breakfast, when people have little time to prepare something. Now I’d like to call your attention to breakfast of a dayoff.

Have you ever tried traditional Russian sirniki? I’m sure, if you live in Russia, at least once in your life your grandmother or mother prepared them for you. Nothing can be compared with sirniki, made of fresh village cottage cheese and fried on a pan. They are usually served with sour cream and sugar. Perhaps, the only dish which is as delicious as sirniki is blini or pancakes. In Russia they say that the thinner blini are made the tastier they are. Blini are served rolled with a variety of fillings but the most delicious ones are pancakes with jam, honey and sour cream.

A traditional Russian dinner consists of three courses. It is the main meal of the day. First of all snacks are served. It can be caviar, herring, salt cucumbers and sauerkraut. All these salt dishes are served in order to excite the appetite. In general Russian cuisine is famous for its pickles.

Then comes the first course — soup. There is a great variety of different soups in Russia but the most famous is «borsch». Shchi, rassolnik, shchaveleviy soup and cold soup — okroshka are also cooked in Russia. Of course, it is not the whole list of traditional Russian soups, but these are the most popular ones.

After the soup the second course follows. It usually includes meat or fish and garnish. The Russians prefer freshwater fish like carp and pike. As for meat, it may be pork, beef, veal, lamb, turkey or chicken. The most famous meat dishes in Russia are zharkoye (stewed beef with potatoes, onions, carrots and garlic seasoned with salt and pepper), beef Stroganoff (the dish consists of pieces of beef served in a sauce with sour cream) and cutlets (the dish made of minced meat). The main course is usually served with garnish — mashed, baked or fried potatoes, pasta or vegetables. Russian people often eat pelmeni (meat dumplings) for the second course. Pelmeni are often cooked by the whole family. Firstly, the filling of minced meat is made due to the particular recipe, then they roll out the pastry and after that everybody sits at the big dinner table and makes pelmeni. Sometimes the preparation of this dish takes almost the whole day. Very often people cook pelmeni for a holiday. The Russians eat everything with bread but sometimes pies are served instead of bread. These pies may be stuffed with various fillings: fish, spring onions and eggs, meat, chicken, potatoes and mushrooms. Sweet pies are served for tea. They are usually stuffed with different fresh berries or jam. Every housewife has her own cooking secret.

As for the third course, it is usually a drink — compote, kissel or mors. In old Russia there existed another popular drink — Medovukha which is derived from the word «honey» (in Russian it sounds as «mjod»). Sometimes this course includes desserts. It may be ice-cream, baked apples or some fresh fruit.

Supper is the longest meal of the day, since it is time when the whole family can gather at one table and discuss some news. Russian people usually have a substantial meal for supper. It may be fried potatoes, potatoes in their skin with herring, fried fish or chicken. But there are also people who prefer light supper such as cottage cheese with sugar or milk and jam, an apple cake called «sharlotka», or a potato cake, or some vegetables. It will depend just on a person’s preference.

It is worth saying that Russian cuisine is famous for its natural products. Russian people are fond of gathering, drying and using mushrooms and all kinds of forest berries in their dishes.

Всю свою жизнь я живу в Москве и могу рассказать много интересного о ресторанах итальянской, французской, китайской, японской и индийской кухни. Однако, прежде всего, мне хотелось бы поделиться с вами секретами русской кухни.

Русская кухня очень необычна. Её отличительная особенность заключается не только в оригинальных рецептах приготовления блюд, но и в том, что она выражает определённый стиль жизни. Русские люди обычно едят 3 раза в день. Утром они завтракают, днём обедают, а вечер — время ужина.

Давайте начнём с завтрака. Приготовление завтрака обычно не занимает много времени, тем более что по утрам люди, как правило, куда-то спешат — на работу, в школу и т. д. Завтрак может представлять собой бутерброды, яичницу или омлет, хлопья или мюсли, манную, овсяную, рисовую или гречневую кашу. Теперь я бы хотела обратить ваше внимание на завтрак русского человека в выходной день.

Вы когда-нибудь пробовали русские сырники? Я уверена, что если вы живёте в России, то хотя бы раз в жизни ваша бабушка или мама готовила вам сырники. С сырниками, приготовленными из свежего деревенского творога, ничто не может сравниться. Обычно их подают со сметаной и сахаром. Наверное, единственное такое же вкусное блюдо, как сырники, — это блины. В России считается, что чем тоньше блин — тем он вкуснее. Блины подаются с разными начинками, но самые вкусные блины — с вареньем, мёдом и со сметаной.

И если вы не в восторге от русской кухни, вам ничто не мешает есть любую другую пищу.

My name is Alexander. I’m at 7th grade. There is a subject in our school, where we study Russian culture and way of life. We have been told about Russian cuisine and national dishes recently. Firstly Russian cuisine is famous for its first courses – different soups. It turns out that cabbage soup is Russian national soup. The soups are served with baked goods – rasstegais. Russian cuisine is also famous for pancakes, rolls and patties with different fillings. Secondly mushroom dishes have a special place in Russian cuisine. There is a tradition to boil, dry, pickle and even marinate the mushrooms. Since long ago there is a tradition to boil the kvass and now it’s considered a national beverage of Russian cuisine. Compotes, kissels and fruit drinks are also well-known among beverages. In Russian cuisine jam and honey are served for dessert. Oven baked apples are the best dessert. Thirdly Russian porridges are the most delicious and healthy. Every day before going to school I eat porridge. My grandmother says that porridge gives strength that’s why Russian men are so strong. I’m very glad that my homeland is famous for such delicious dishes.

Меня зовут Александр. Я учусь в седьмом классе. У нас в школе есть такой предмет, где изучают русскую культуру и быт. Недавно нам рассказывали о русской кухне, о национальных русских блюдах. Во – первых, русская кухня, славится своими первыми блюдами – различными супами. Оказывается, русским национальным супом являются щи. К супам подают выпечку – расстегаи. Также русская кухня известна блинами, ватрушками и пирожками с различной начинкой. Во — вторых, грибные блюда занимают особое место в русской кухне. Грибы принято варить, сушить, солить и даже мариновать. Еще, издавна на Руси научились варить квас, и сейчас он считается национальным напитком русской кухни. Из напитков ещё известны компоты, кисели и морсы. На десерт в русской кухне подают варенье и мёд. А самым лучшим десертом являются яблоки, запечённые в духовке. А в — третьих, русские каши самые вкусные и полезные. Каждое утро, прежде чем пойти в школу, я ем кашу. Моя бабушка говорит, что каша придаёт много сил, поэтому русские мужчины такие сильные. Я очень рад, что моя родина славится такими вкусными блюдами.

To my mind, delicious food is one of the greatest pleasures in our life. I’ve been living in St. Petersburg since my birth and can tell you many interesting things about its restaurants of Italian, French, Chinese, Japanese and Indian cuisine. However, first of all I’d like to share some secrets of typical Russian cuisine with you.

Russian cuisine is indeed original. Its distinctive feature is not only in original recipes but also in the fact that it reflects a certain way of life. Russian people usually have meals three times a day. In the morning they have breakfast, in the afternoon – dinner and in the evening it’s time for supper.

Let us start with breakfast. This meal doesn’t usually take much time to prepare, due to the fact that people, as a rule, are in a hurry for work, school or somewhere else. It may include just sandwiches, fried or scrambled eggs, corn flakes or muesli and various kinds of porridges. It can be cream of wheat, oatmeal

porridge, rice or buckwheat porrige. It is more common for Russian people to drink black tea with jam or honey but there are ones who prefer coffee in the morning. You may think there is nothing special in this set of dishes. You are right. But it was a description of a typical working day breakfast, when people have little time to prepare something. Now I’d like to call your attention to breakfast of a dayoff.

Have you ever tried traditional Russian sirniki? I’m sure, if you live in Russia, at least once in your life your grandmother or mother prepared them for you. Nothing can be compared with sirniki, made of fresh village cottage cheese and fried on a pan. They are usually served with sour cream and sugar. Perhaps, the only dish which is as delicious as sirniki is blini or pancakes. In Russia they say that the thinner blini are made the tastier they are. Blini are served rolled with a variety of fillings but the most delicious ones are pancakes with jam, honey and sour cream.

A traditional Russian dinner consists of three courses. It is the main meal of the day. First of all snacks are served. It can be caviar, herring, salt cucumbers and sauerkraut. All these salt dishes are served in order to excite the appetite. In general Russian cuisine is famous for its pickles.

Then comes the first course – soup. There is a great variety of different soups in Russia

but the most famous is “borsch”. Shchi, rassolnik, shchaveleviy soup and cold soup – okroshka are also cooked in Russia. Of course, it is not the whole list of traditional Russian soups, but these are the most popular ones.

After the soup the second course follows. It usually includes meat or fish and garnish. The Russians prefer freshwater fish like carp and pike. As for meat, it may be pork, beef, veal, lamb, turkey or chicken. The most famous meat dishes in Russia are zharkoye (stewed beef with potatoes, onions, carrots and garlic seasoned with salt and pepper), beef Stroganoff (the dish consists of pieces of beef served in a sauce with sour cream) and cutlets (the dish made of minced meat). The main course is usually served with garnish – mashed, baked or fried potatoes, pasta or vegetables. Russian people often eat pelmeni (meat dumplings) for the second course. Pelmeni are often cooked by the whole family. Firstly, the filling of minced meat is made due to the particular recipe, then they roll out the pastry and after that everybody sits at the big dinner table and makes pelmeni. Sometimes the preparation of this dish takes almost the whole day. Very often people cook pelmeni for a holiday. The Russians eat everything with bread but sometimes pies are served instead of bread. These pies may be stuffed with various fillings: fish, spring onions and eggs, meat, chicken, potatoes and mushrooms. Sweet pies are served for tea. They are usually stuffed with different fresh berries or jam. Every housewife has her own cooking secret.

As for the third course, it is usually a drink – compote, kissel or mors. In old Russia there existed another popular drink – Medovukha which is derived from the word “honey” (in Russian it sounds as “mjod”). Sometimes this course includes desserts. It may be ice-cream, baked apples or some fresh fruit.

Supper is the longest meal of the day, since it is time when the whole family can gather at one table and discuss some news. Russian people usually have a substantial meal for supper. It may be fried potatoes, potatoes in their skin with herring, fried fish or chicken. But there are also people who prefer light supper such as cottage cheese with sugar or milk and jam, an apple cake called “sharlotka”, or a potato cake, or some vegetables. It will depend just on a person’s preference.

It is worth saying that Russian cuisine is famous for its natural products. Russian people are fond of gathering, drying and using mushrooms and all kinds of forest berries in their dishes.

In my opinion, Russian cuisine is one of the most varied and delicious in the world but tastes differ. As far as I know, people from other countries consider Russian people heavy eaters not only because of the amount of food we eat per day, but also due to its fat content. Anyway, if you are not keen on Russian cuisine, it is up to you to choose any other food.

Трудно не согласиться с тем, что вкусная еда – одно из самых больших удовольствий в нашей жизни. Всю свою жизнь я живу в Санкт-Петербурге и могу рассказать много интересного о ресторанах итальянской, французской, китайской, японской и индийской кухни. Однако, прежде всего, мне хотелось бы поделиться с вами секретами русской кухни.

Русская кухня очень необычна. Ее отличительная особенность заключается не только в оригинальных рецептах приготовления блюд, но и в том, что она выражает определенный стиль жизни. Русские люди обычно едят 3 раза в день. Утром они завтракают, днем обедают, а вечер – время ужина.

Давайте начнем с завтрака. Приготовление завтрака обычно не занимает много времени, тем более что по утрам люди, как правило, куда-то спешат – на работу, в школу и т. д. Завтрак может представлять собой бутерброды, яичницу или омлет, хлопья или мюсли, манную, овсяную, рисовую или гречневую кашу. По утрам обычно пьют чай с вареньем или медом, но есть люди, предпочитающие кофе. Возможно, вам покажется, что в таком наборе блюд нет ничего особенного. Вы правы. Дело в том, что это было описание завтрака в обычный рабочий день, когда у людей нет времени что-либо готовить. Теперь я бы хотела обратить ваше внимание на завтрак русского человека в выходной день.

Вы когда-нибудь пробовали русские сырники? Я уверена, что если вы живете в России, то хотя бы раз в жизни ваша бабушка или мама готовила вам сырники. С сырниками, приготовленными из свежего деревенского творога, ничто не может сравниться. Обычно их подают со сметаной и сахаром. Наверное, единственное такое же вкусное блюдо, как сырники, – это блины. В России считается, что чем тоньше блин – тем он вкуснее. Блины подаются с разными начинками, но самые вкусные блины – с вареньем, медом и со сметаной.

Традиционный русский обед состоит из трех блюд. Обед – самое главное время еды. Чтобы раззадорить аппетит, сначала подается закуска. Это могут быть соленые огурчики, икра, селедка, квашеная капуста. Русская кухня вообще славится своими соленьями.

Дальше следует первое блюдо. В России готовят огромное количество первых блюд, но самое известное из них – это борщ. Также есть щи, рассольник, щавелевый суп и холодный суп – окрошка. Естественно, это не весь список русских супов, но это одни из самых популярных.

После первого блюда наступает время для второго. Обычно это мясо или рыба с гарниром. Русские предпочитают в еде пресноводную рыбу – карпа или щуку. Что касается мяса, здесь может быть все что угодно – свинина, говядина, телятина, баранина, индейка, курица. Самые известные русские мясные блюда – это жаркое (тушеное мясо с картофелем, луком, морковью, чесноком и какой-либо приправой), бефстроганов (блюдо из кусочков говядины под сметанным соусом) и котлеты (блюдо, сделанное из фарша). Второе блюдо обычно подается с гарниром: картофельным пюре, отварным или жареным картофелем, макаронами или овощами. Очень часто в качестве второго блюда используют пельмени. Их готовят обычно всей семьей. Сначала по определенному рецепту делают начинку из фарша, затем раскатывают тесто, а потом все вместе садятся за большой стол и лепят пельмени. На приготовление этого блюда уходит почти весь день. Часто это праздничное блюдо. Русские едят все с хлебом, но иногда вместо хлеба подаются пирожки. Они могут быть с самой разнообразной начинкой – с рыбой, с луком и яйцом, с мясом, с курицей, с картошкой и грибами. К чаю подаются сладкие пирожки – с разными ягодами или вареньем из этих же ягод. У каждой хозяйки свой секрет приготовления пирожков.

Третье блюдо – это обычно компот, кисель или морс. В Древней Руси был еще один популярный напиток – медовуха, чье название происходит от слова “мед”. Иногда к третьему блюду подают десерт. Это может быть мороженое, печеные яблоки или свежие фрукты.

Ужин – самое длительное время еды. Вся семья обычно собирается за одним столом и обсуждает новости. В России принято плотно ужинать. Это может быть и жареная картошка, и картошка в мундире с селедкой, и жареная рыба, и курица. Но многие люди предпочитают более легкий ужин – творог с сахаром или вареньем, яблочный пирог “шарлотка” или картофельный пирог, овощи. Выбор блюда зависит только от вашего желания.

Нельзя не сказать и о том, что русская кухня славится натуральными продуктами. Русские очень любят собирать, сушить и использовать в своих блюдах грибы и всевозможные лесные ягоды.

Я думаю, что русская кухня – одна из наиболее разнообразных и вкусных в мире, но о вкусах не спорят. Насколько я знаю, некоторые приезжие из других стран полагают, что русские – большие любители поесть. Основанием для такого рода предположений служит не столько количество еды, поглощаемой за день, сколько жирность русской пищи. И если вы не в восторге от русской кухни, вам ничто не мешает есть любую другую пищу.

  • Saint Petersburg: This port city on the Baltic Sea is the second largest city in the country with more than five million inhabitants. The city is known as the largest northernmost city with over one million inhabitants. The Neva river flows through Saint Petersburg, that formerly was also referred to as Petrograd or Leningrad in the last century. Founded by Peter the Great in 1703, the city is home to the world renowned Hermitage museum of art and the Winterpalace, previously home of the Russian tzars and emperors.

Russian is a Slavic language and it is the most widely spoken Slavic language. Ukrainian and Polish are also Slavic languages but with fewer speakers.

It is spoken in Russia, Belarus, Kazakhstan, Kyrgyzstan and by many people in Ukraine. Russian is also spoken by many people as a second language in much of Eastern Europe and the Baltics as well as in the Caucasus and Central Asia.

Russian is the eighth most spoken language in the world but is the second most dominant language on the internet — after English!

Russian is one of the six working languages spoken at the United Nations!

The Russian language is written with the Cyrillic alphabet which consists of 33 letters. Some letters are similar to the Latin alphabet, but some are different. For example: ‘P‘ in Russian is pronounced ‘R’ in English or the ‘C‘ is pronounced as ‘S’, the ‘Y‘ is an ‘U’

Until 1991, Russia belonged to the USSR (Union of Soviet Socialist Republics) and this was commonly displayed as ‘CCCP‘ which is pronounced as ‘SSSR’ in English

Most young people in Russia also learn to speak English, French or German in school.

Russian People

Most of the Russian population lives in the westernmost part of the country that belong to the European continent. Here are the majority of the largest Russian cities such as Moscow, St Petersburg, Yekaterinburg, Samara and Omsk.

Three out of four people in Russia live in urban centres. 

The family is very important to Russians. Here most families include the grandparents, parents and children in the same household. 

Children start school when they turn six years old and typically go to school for ten years. After Grade 11, students can go to study at university.

Soccer and ice hockey are the most popular sports in Russia. Soccer is referred to as ‘Futbol‘ in Russia. 

In 2014 Russia hosted the Winter Olympics in Sochi and in 2018 Russia hosted the Fifa Soccer World Cup. The winner of the 2018 world championship was the national football team of France. The 2022 Soccer World Cup will be held in December 2022 in Qatar.

Russia is not a democratic country. According to the World Freedom Report 2021, Russia is declared as ‘Not free’ ranking with only 20 out of 100 points. The authoritarian regime of President Vladimir Putin controls the media and suppresses opponents. Corruption and crime are another threat to the country and the Russia’s recent invasion of neighbouring country Ukraine caused a human crisis in the region. This only will lower Russia’s «freedom» ranking in 2022.

Famous Russians include:

  • Aleksandr Puschkin (1799-1837): poet and playwright and considered the father of modern Russian Literature. Famous works his novel written in verse called «Eugene Onegin».  
  • Piotr Ilyich Tchaikovsky (1840-1893): composer. He transformed «Eugene Onegin» into a famous opera. His «Swan Lake» is one of the most famous ballets performed worldwide.
  • Leo Tolstoy (1828-1910): Russian writer and novelist, known for his works «War and Peace» and «Anna Karenina»
  • Igor Stravinsky (1882-1971): The composer is most famous for his work «The Firebird», which is a ballet.
  • Yuri Gagarin (1934-1968): Russian cosmonaut (that is how they call astronauts in Russia) is the first person to orbit the Earth
  • Maria Sharapova (born 1987): tennis player and first Russian player to win Wimbledon in 2004
  • Garry Kasparov (born 1963): Chess grandmaster

Russia is among the ten largest economies in the world and the world’s third biggest gold producer after China and Australia. And Russia is one of the leading producers of natural gas and oil as well as metals. 

The Russian Federation belongs to the BRICS countries. The BRICS are an association of the world’s major emerging economies and include Brazil, Russia, India, China and South Africa.

The main agricultural products are grains, sugar beets, sunflower seeds and vegetables and fruits as well as beef and milk.

Some well known Russian companies include Gazprom, Russia’s largest natural gas and oil company, Sberbank, Russia’s largest bank and Aeroflot, Russia’s national airline. 

The country’s main trading partners are China, Germany, Netherlands, Belarus and the USA.

The Russian main dishes contain: pork and beef, lamb, chicken, fish, potatoes and root vegetables as well as porridge and bread. Sour cream accompanies many dishes.

Especially vegetable soups and stews play an important role in Russian cuisine.

Russian food is full of flavour and the Russian cuisine is as diverse as the regions in the huge country. Here is some typical Russian food:

  • Borscht or Red beet soup: soup made with red beets and vegetables that are cut into small pieces. This red soup is often served cold and is then blended with yoghurt or sour cream from which the soup gets its pink colour.
  • Soljanka: thick cabbage and vegetable soup with pickled mushrooms or vegetables that gives it a spicy flavour
  • Blinis: thin Russian pancakes often served with savoury or sweet fillings
  • Porridge: made with local cereal depending on available crops especially buckwheat, semolina and oats. It is cooked in milk for breakfast
  • Olivier Salad, usually known internationally as Russian salad: salad made with boiled and diced potatoes, carrots, boiled eggs and boiled chicken pieces, pickles and mixed with sour cream or mayonnaise
  • Shashlik: skewered and grilled lamb or chicken cubes, similar to a shish kebab or satay
  • Pirozhki: fried dough pockets or mini pies, that are stuffed with meats or savoury fillings, sometimes they come with apple or other sweet fillings
  • Salted herring: pickled vegetables and salted herring are popular starters, often served with rye bread and onions
  • Kulich: Russian Easter cake in form of a dome which is made with nuts and fruits and often decorated with icing
  • Moroshenoe: Russian ice-cream, popular even when it’s cold outside

  • Caviar: salted or cured roe (fish eggs) from the wild sturgeon or other fish. However, black caviar is a delicacy and a costly treat which is only served on special occasions or eaten in small amounts.

Did you know? One of the rarest and most costly caviar comes from the Beluga sturgeon of the Caspian Sea. Black Beluga caviar costs up to 10,000 US dollar per kg/ 4,500 GB pounds per lb of weight! Today, caviar comes from fish farms, as wild caviar from the Caspian Sea has become illegal due to overfishing.

Russia Facts | Animals in Russia

Due to the harsh climate in many regions in Russia, wildlife is often limited. The tundra landscape is covered by snow for more than nine months every year. However, large mammals such as reindeer survive in the tundra. Reindeer are referred to by some as caribou.

Arctic foxes and polar bears can be seen in the far north, while whales and seals swim in the Arctic waters.

There are several bear species such as the brown bears in the Caucasus and the Asian black bears which live in the Russian far-east. 

The Siberian tiger and the Amur leopard are among the most endangered species in Russia.

Russian cuisine is diverse, as Russia is by area the largest country in the world. Russian cuisine derives its varied character from the vast and multi-cultural expanse of Russia. Its foundations were laid by the peasant food of the rural population in an often harsh climate, with a combination of plentiful fish, poultry, game, mushrooms, berries, and honey. Crops of rye, wheat, barley and millet provided the ingredients for a plethora of breads, pancakes, cereals, beer and vodka. Soups and stews full of flavor are centered on seasonal or storable produce, fish and meats. This wholly native food remained the staple for the vast majority of Russians well into the 20th century.

Russia’s great expansions of culture, influence, and interest during the 16th–18th centuries brought more refined foods and culinary techniques, as well as one of the most refined food countries in the world. It was during this period that smoked meats and fish, pastry cooking, salads and green vegetables, chocolate, ice cream, wines, and juice were imported from abroad. At least for the urban aristocracy and provincial gentry, this opened the doors for the creative integration of these new foodstuffs with traditional Russian dishes. The result is extremely varied in technique, seasoning, and combination.

Soups

Shchi (cabbage soup) had been the first course in Russian cuisine for over a thousand years. Although tastes have changed, it steadily made its way through several epochs. Shchi knew no social class boundaries, and even if the rich had richer ingredients and the poor made it solely of cabbage and onions, all these «poor» and «rich» variations were cooked in the same tradition. The unique taste of this cabbage soup was from the fact that after cooking it was left to draw (stew) in a Russian stove. The «Spirit of shchi» was inseparable from a Russian izba (log hut). Many Russian proverbs are connected to this soup.

Rassolnik is a hot soup in a salty-sour cucumber base. This dish formed in Russian cuisine quite late—only in the 19th century. About this time the name rassolnik was attached to it, originating from the Russian word «rassol» which means brine (pickle water). Pickle water was known to be used as base for soups from the 15th century at the latest. Its concentration and ratio with other liquids and soup components gave birth to different soups: solyanka and rassolnik. The latest are moderately sour-salty soups on pickled cucumber base.

Okroshka is a cold soup based on kvass or, sour milk. Okroshka is also a salad. The main ingredients are two types of vegetables that can be mixed with cold boiled meat or fish in a 1:1 proportion . Thus vegetable, meat, and fish varieties of okroshka are made.

To begin with I*d like to say that the theatre is a great means of promoting culture among people. It*s often called » the Temple of Art » because it educates, relaxes, entertains and shows us how wonderful the world around us is. There is a great variety of theatres in Moscow and the most difficult things for the theatre — goers is to decide which theatre to go to.

Some theatres are more popular with the public than others that*s why it*s almost impossible to get tickets when a good play is on. If you managed to get tickets, you will enjoy the performance from the very beginning to the end. I*ll never forget my first visit to the Ballshoi Opera House. My friend and I wanted to see the famous ballet the Swan Lake by P. E. Chaikovsky, the great Russian composer. We bought the tickets in advance.

It was an evening performance and we came half an hour before the show. We bought a play bill and find out what the cast was. We were glad to know that the leading parts were acted by the talented young dancers.

Than my friend and I took our seats in stalls not far from the stage. Though it wasn*t the first night but there was a full audience at the theatre. Soon the lights went down and the curtain went up. As soon as the music started the public cheered enthusiastically and began to applaud.

From the very first minute I was deeply impressed by everything I saw on the stage and followed the play with the great interest. The setting and dancing were exelent. The customs were fine and the scenery and the music were brilliant. The ballet seemed to me as the beautiful fairy tale and the atmosfere was really magical.

I couldn*t take my eyes off the stage. After the first act we went to look over the theatre. We saw boxes, the orchestra pit, the dress — circle and the gallery.

There were many portraits of opera — singers and the ballet dancers on the walls of the foyer. I was especially charmed by the » Small Swans* dance «. When the curtain fell of the end of the performance there was a storm of applause. The dancers were presented with flowers.

The performance was a great success with the public. In a word my first visit to the Ballshoi Opera House gave me unforgettable impressions!

A. Mary is a professional dress-maker specializing in exotic costumes. She devotes many hours to crafting mermaid tails and hand-made tops. Her professional mermaid costume includes a tail and a top. A tail is made of the finest silicone that bends naturally with movement and looks beautifully on film and in print. Out of the depths of the water her costume shines with hundreds ot pearls, crystals, and gemstones.

B. Today’s well-educated person uses about 18,000 words. Shakespeare, whose plays written for a small theatre are now performed in more countries than ever before, used over 34,000 different words, thousands of which he made up. For example: accessible, roadway, schoolboy, and watchdog. Many of his phrases have fallen into everyday use in our language today, including, “A horse, a horse! My kingdom for a horse!’’ by Richard III.

C. The Celtic division of the year was into two parts. The winter half was considered the beginning of the year, and the summer half the second part. There were two further subdivisions. so the year was finally divided into the standard four seasons. At each of these four stages, a Fire Festival was celebrated. It involved religious ceremonies, music, storytelling, and poetry. These great festivals were regarded to be the best time.

D. As symbols of respect and courage, knights turned out to be an intriguing mix of all the things that made males the best, as their education included the most effective sorts of exercises for the brain and the human body. Knight tournaments were a good way for the knights to try out the actual travails of fighting and never having to go through the pain and troubles of having to look after themselves, and of their kingdoms.

E. Were there any women pirates in Renaissance England? They were in the minority, but they were never the less there and very able. Lady Mary was a daughter of a pirate and married to a pirate. When her husband died, she recruited her castle staff and went to sea herself. Her luck ran out when she captured a German captain, who was a friend of Queen Elizabeth. So Lady Mary quit piracy … and started selling stolen goods.

F. Russia is an amazing holiday destination. It should be visited during the festival season, as it reveals the rich cultural tradition and fascinating customs of its people. While the festivals come from the Christian legacy Russia shares with Europe and America, the manner of celebration is unique. Enthusiastic travelers suggest planning a Russian holiday during the festival time and to be sure that the memories will last a lifetime!

G. Normally very fine textiles are found in graves. Obviously, the quality of clothing worn in the Middle Ages would reduce with lower ranks, but even the slaves did not wear cloth as rough as people thought in the past and some still do today. Slaves would probably wear their master’s clothes, which may have been very thin in places and not decorated. They would usually receive the underclothes to be worn as overclothes.

    ЕГЭ по английскому языку начинается с девяти заданий на аудирование. В сумме за них можно получить 20 баллов, а это достаточно много. Поэтому к выполнению подобных заданий нужно хорошо подготовиться – сложно получить высокие баллы, не имея привычки именно к формату ЕГЭ. Даже те люди, которые владеют английским языком на уровне B2-C1, но не готовились к этим заданиям с учетом их структуры, могут набрать неожиданно мало баллов – умение бегло воспринимать английскую речь на слух очень важно, но его может быть недостаточно.

    Нужно хорошо укладываться в строго ограниченное время, быстро читать текст задания и знать его формат. Начинать подготовку к аудированию нужно заблаговременно, чтобы привыкнуть к такому формату заданий – в Интернете можно найти множество вариантов. А для дополнительной тренировки навыка понимания речи на слух хорошо подходят различные подкасты для всех уровней сложности, которых сейчас тоже немало.


    Первое задание

    Первое задание может принести сразу 6 баллов. В задании приводится 7 утверждений, отражающих основную мысль текстов. Как правило, они все связаны общей темой –  например, это могут быть тексты об окружающей среде, об одежде, о личных страхах или о еде. Нужно прочитать и осмыслить их за 20 секунд, после чего на магнитофоне включаются идущие подряд 6 записей небольших высказываний. Их нужно соотнести с приведенными в задании утверждении, одно из которых окажется лишним. Запись повторится дважды. Давайте рассмотрим пример задания с приведенными скриптами аудиозаписи.

    I honestly support school uniforms and let me explain why. I think one of the problems our current generation is facing is that they are all influenced by gang culture. It is the root cause of numerous evils at schools, and many people from my school are members in the so-called school gangs. With uniforms, I believe, there are not so many chances for conflicts and violence. Besides, it creates a healthy team culture and harmony on campus.

    I think when a person hears the word ‘school’, the first two things that come to mind are discipline and rules. Everybody knows that we kids love to break rules and it is hard to make us obey. Almost daily at schools, it is common to spend some time making us obey certain rules and disciplining us. Making us wear a uniform is a part  of it but I don’t think there’s any point in trying to do so because kids will be kids. They never obey.

    My school has a dress code which is not exactly a uniform and some students treatthis too creatively. Every morning our teachers start to check our clothes and so on. This happens during the first class so I think a lot of valuable lesson time could be saved if we had a strict uniform policy at school. People in charge would not have
    to worry about checking what each and every student is wearing and whether it’s acceptable or not.

    My school doesn’t have a uniform and I don’t like it. You may be surprised but look – the best schools in the country do have uniforms and nobody there minds that! I think a uniform creates a sense of belonging and a feeling of pride amongst students towards their institution. Это отражено в седьмом утверждении. В последнем же высказывании человек, с одной стороны, говорит о карьере, что вроде бы вписывается в шестое утверждение, но больший упор он делает на слово professionalism: Professionalism is very important as we grow up.     Про экзамены говорится во второй реплике учителя: you passed your exams with flying colours. Это – фразеологизм, который означает «прекрасно». Но даже если вы не знаете значения этой устойчивой фразы и не поняли, как именно сданы экзамены, не стоит переживать – сразу после этого учитель говорит «My colleagues and I are so proud of you all». Из этого следует, что мальчик сдал экзамены хорошо, ведь иначе им бы не стал гордиться весь преподавательский состав.

    Про брата говорится чуть позднее – I’ll have to help my brother. He’s just had surgery, you know. Но о возрасте брата ничего не сказано – он может быть и младшим, и старшим, поэтому для второго высказывания выбираем цифру 3.     Alice Jones: Good afternoon. It’s a pleasure to be here. Thank you for inviting me.

    Presenter: Your biggest achievements are connected with Hollywood and even your surname now is English. Do you still have any connections in Brazil?

    Alice Jones: Well, my roots certainly remain firmly in Brazil. I own a production company in São Paolo, the city in which I was raised. Many of my family members are in the film and television industry, and my aunt and mother are both actresses there and my sister is a producer.

    Presenter: What inspired you to become an actress?

    Alice Jones: I can’t say I’ve always been interested in stardom. Once as a teenager I saw a performance at a theatre, and I loved the play. For me, it changed my perspective on acting and theater. I was 14, and I was enchanted; I completely fell in love. Then I finished school in São Paolo and started attending a university for the performing arts. When I got the invitation to come to an audition, I remember exactly when they told me who was going to be in the film. These were the same actors as in that play. I thought it was written in the stars.

    Presenter: Are you currently into any project?

    Alice Jones: I am. It is based on a novel by a wonderful Spanish writer. I read the book eight years ago. A really good friend of mine gave me the book, and she said, “You need to read this book because it’s a beautiful, strong story about this woman. Maybe she’s a nice character for you to play, so just read it”. Years went by, and now they want to make a version of it in Spanish, and I was happy when they called me because I always thought it was such a beautiful character for a woman to play. When they called me, I couldn’t believe that eight years after I read the book and fell in love with the character, they came to me. It was very special.

    Presenter: As far as I remember, it’s not the first time you’ve worked on a book you love.

    Alice Jones: So true! One of my films, «Blindness», is also based on one of my favourite books, so when they invited me, I had the same feeling. For «Queen of the South», again, my main reason to sign up for it was the character and the book, because that was a role I really wanted to play. So right after I got cast, I went straight to the book and made notes, getting all the little details about what people say about her, who she is, what type of woman she is in the world that she’s born into, how she manages to survive – all that. I was just trying to honor the book and
    have a better understanding of it.

    Presenter: How do you prepare for your roles?

    Alice Jones: I have an acting coach that helps me. He works with me on preparing – running lines and having ideas and developing different ways of approaching characters. When it’s a story, based on a book, I basically work off the book. The book is my main source of material.

    Presenter: I think now you’ve worked more in English than in Portuguese. Is it still difficult for you to work in another language that’s not Portuguese?

    Alice Jones: Even now, it’s still a challenge. Because I’m so close to my family and friends and I always speak Portuguese, my heart and mind go to Portuguese. Once I’m on the set, after three or four months doing the series working hard every day and only speaking English, it becomes easier. Your mindset is there and you’re dreaming in English. But it is hard; in a way you keep translating from one language to another.

    A. The VLT (Very Large Telescope) is the world’s largest telescope and it is taking scientists further back to the Big Bang than they ever thought possible. In other words, the VLT is a kind of a time machine, giving astronomers detailed views of events that took place in the earliest days of the cosmos. One day, we will have a much clearer picture of how our planet was born.

    C. In 1948, a British farmer discovered an interesting lump of metal while ploughing his field. At first he thought the metal bits were parts of an old bed. Then more ‘parts of old beds’ turned up and the farmer took them to the local museum. ‘But these bits are priceless!’ exclaimed the keeper of the museum. ‘They are Iron Age jewellery and coins!’ Over the next 40 years, more and more items were found in the same field.

    D. Rats may have had a bit of a hard time over the years but these days lots of people are forgetting about guinea-pigs and hamsters and are buying rats instead. Domestic rats aren’t the same as the ones that run around rubbish bins — they’re actually quite cute. They are very intelligent and can be trained like dogs. In Western cultures, people look each other in the eye during a conversation to show interest and trust, but in many Asian countries, it’s rude to look people in the eye, especially a superior such as a teacher. This can indicate that a person is putting up an unconscious barrier between themselves and others.

    F. Earthquakes happen all the time in all parts of the world but we don’t notice most of them because they are small. However, big earthquakes are really dangerous. They can make buildings fall down, set off landslides and do other deadly things. The highest death toll caused by an earthquake was in China in 1556, when at least 830,000 people died.

    G. According to scientists, Americans watch more TV on average than any other nationality. In fact, many people, particularly children, sit for 35 hours or more per week glued to the box. What’s wrong with watching all that TV? Studies have linked it to everything from obesity to aggression in children not to mention that it puts your mind into a sort of sedated state. Habitual television watching, over long periods of time, has been known to cause depression, and anger.

    ‘Do you realise what that means?’ she asked; ‘a Wordsworth booklet next Christmas, and another calendar the Christmas after, with the same problem of having to write suitable letters of thankfulness. No, the best thing to do is to drop all further allusion to the calendar and switch off on to some other topic.’

    ‘But what other topic?’

    ‘Oh, something like this: ‘What do you think of the New Year Honours List? A friend of ours made such a clever remark when he read it.’ Then you can stick in any remark that comes into your head; it needn’t be clever. The Froplinsons won’t know whether it is or isn’t.’

    ‘We don’t even know on which side they are in politics,’ objected Egbert; ‘and anyhow you can’t suddenly dismiss the subject of the calendar. Surely there must be some intelligent remark that can be made about it.’

    ‘Well, we can’t think of one,’ said Janetta wearily; ‘the fact is, we’ve both written ourselves out.’

    There was a long silence, the forlorn silence of those who are bereft of hope and have almost ceased to care. Then Egbert started from his seat with an air of resolution. The light of battle was in his eyes.

    ‘Let me come to the writing-table,’ he exclaimed; ‘I’m going to write to the editor of every enlightened and influential newspaper in the Kingdom, I’m going to suggest that there should be a sort of epistolary Truce of God during the festivities of Christmas and New Year. From the twenty-fourth of December to the third or fourth of January it shall be considered an offence against good sense and good feeling to write or expect any letter or communication that does not deal with the necessary events of the moment. Answers to invitations, arrangements about trains, renewal of club subscriptions, and, of course, all the ordinary everyday affairs of business, sickness, engaging new cooks, and so forth, these will be dealt with in the usual manner as something inevitable. But all the devastating accretions of correspondence, incident to the festive season, these should be swept away to give the season a chance of being really festive.’

    ‘But you would have to make some acknowledgment of presents received,’ objected Janetta; ‘otherwise people would never know whether they had arrived safely.’

    ‘Of course, I have thought of that,’ said Egbert; ‘every present that was sent off would be accompanied by a ticket bearing the date of dispatch and the signature of the sender, and some conventional hieroglyphic to show that it was intended to be a Christmas or New Year gift; there would be a counterfoil with space for the recipient’s name and the date of arrival, and all you would have to do would be to sign and date the counterfoil, add a conventional hieroglyphic indicating heartfelt thanks and gratified surprise, put the thing into an envelope and post it.’

    ‘It sounds delightfully simple,’ said Janetta wistfully, ‘but people would consider it too perfunctory.’

    ‘It is not a bit more perfunctory than the present system,’ said Egbert; ‘I have only the same conventional language of gratitude at my disposal with which to thank dear old Colonel Chuttle for his perfectly delicious Stilton, which we shall devour to the last morsel, and the Froplinsons for their calendar, which we shall never look at. So you see the present system of acknowledgment is just as perfunctory and conventional as the counterfoil business would be, only ten times more tiresome and brain-racking.’

    ‘Your plan would certainly bring the idea of a Happy Christmas a step nearer realisation,’ said Janetta. ‘Meanwhile, what am I to say to the Froplinsons?’
